Sauces are a great addition to any foods. They can be used for meats, starches, and vegetables. I will teach you how to make some basic sauces that you can make into other sauces to flavor your foods.

Basic Chicken Sauce
(Part 1)

2 tablespoons melted butter (unsalted)
3 tablespoons flour
2 cups chicken stock
Spice Delight all Purpose Essence or salt and pepper to taste.


·Melt butter in a heavy sauce pan over medium heat
·Add flour and stir until smooth
·Pour half of stock and stir until smooth, then cook a few minutes
·Add remaining of stock and simmer over medium low heat
·Stir occasionally for about 5 minutes until sauce thickens
·Adjust seasoning if necessary

With this basic sauce you can add herb i.e. Basil, thyme, Oregano, Tarragon etc. Vegetables such as onions, mushrooms, peppers, celery, carrots, and tomatoes are some of the different vegetables that can be added to make a more favorable sauce. When using vegetables in sauces sauté them in butter or olive oil. Add flour and slowly stir in half of the stock and stir until smooth. Once sauce comes to a simmer you can add herb if you choose to, to give the sauce a more complex and wonderful flavor.
