Squash Salad & Mushroom Portabella Pizza Burgers
Squash Salad

Makes 4 to 6 servings

2 tablespoons olive oil
2 yellow summer squash, diced medium
2 zucchini squash, diced medium
1 small red onion, diced medium
2 teaspoons Spice Delight All-Purpose Essence
½ teaspoon whole dried basil
¼ cup Colavita? balsamic vinegar
1 cup grape tomatoes, sliced in half
1 fresh basil leaf to garnish

• Preheat oven to 350 degrees.
• Place first 6 ingredients listed above in medium size bowl.
• Mix well so that everything is blended together.
• Spread ingredients out on cookie sheet pan and bake for 15 minutes.
• Let cool on countertop 5 to 10 minutes.
• Place in serving bowl; stir in balsamic vinegar.
• Garnish with grape tomatoes and basil leaf. Refrigerate until serving time.

Portabella Mushroom Pizza Burgers

Makes 2 to 4 servings

2 whole Portabella mushrooms
½ cup Paul Newman's Tomato Basil Pasta Sauce
1 teaspoon Spice Delight All-Purpose Essence
4 slices Mozzarella cheese
2 fresh basil leaves to garnish
2 tablespoons olive oil
2 of your favorite hamburger buns

• Preheat sauté pan over medium-high heat.
• Pull stems from mushrooms and discard.
• Drizzle 1 tablespoon olive oil on bottom of each mushroom.
• Sprinkle ½ teaspoon Spice Delight evenly on bottom of each mushroom.
• Sauté mushrooms 3 minutes per side.
• Add pasta sauce to bottom of mushrooms. Top each mushroom with 2 slices of cheese.
• Add small amount of water to pan so steam will soften mushrooms and melt cheese. Cook about 2 minutes.
• Garnish with basil. Serve these great burgers on your favorite hamburger buns.
