Pineapple Rice with
Raisins & Pecans
Makes 4-6 servings
1 teaspoon Smart Balance Butter Substitute
1 cup fresh or canned pineapple, diced small
1 teaspoon ground cinnamon
3 tablespoons turbinado sugar (sugar in the raw)
1 cup uncooked rice
2 cups pineapple juice
1/2 cup dark raisins
1/4 cup finely chopped pecans
1. Melt butter substitute in a medium size saucepan.
2. Add pineapple, cinnamon and sugar. Saute' 6 minutes over medium heat
until pineapple is golden brown, stirring often.
3. Stir in rice, pineapple juice and raisins: bring to a boil. Reduce heat to
a simmer. Cook for 25 to 30 minutes or until rice is tender, stirring
occasionally to prevent rice from sticking.
4. Serve hot or cold. At serving time, garnish with pecans.
