Turkey Salad/Sweet Potato
Serves 6 to 8
2 pounds cooked turkey, diced
1 small onion, diced
1 cup mayonnaise
1 to 2 teaspoons Spice Delight All-Purpose Essence
1 teaspoon yellow prepared mustard
Black pepper to taste
Sliced bread, crackers or salad greens

Place turkey and onion in a large bowl.
Add mayonnaise, Spice Delight Essence, mustard and black pepper; mix well.
Refrigerate turkey salad for at least 30 minutes to blend flavors.
Serve on your favorite bread, with crackers or on salad greens
Sweet Potato Nuggets With Orange Extract Recipe
Serves 4 to 6
4 medium sweet potatoes, diced medium
1/2 cup packed brown sugar
1/2 tablespoon ground cinnamon
2 tablespoons salted butter
1/2 teaspoon orange extract
1 pinch kosher or sea salt
1 sheet parchment paper

Preheat oven to 350 degrees.
Place sweet potatoes in a large bowl. Combine brown sugar and cinnamon.
Sprinkle cinnamon-sugar mixture over sweet potatoes.
Drizzle potatoes with butter. Mix well until potatoes are evenly coated with cinnamon-sugar and butter.
Spread sweet potatoes on a cookie sheet lined with parchment paper.
Bake 40 to 45 minutes or until tender.
Place cooked sweet potato nuggets in a bowl; stir in orange extract and salt.
Chef Barry's Tip:
Substitute lemon, almond or vanilla extract for the orange extract, if desired. Remember to fold in the extract after the sweet potatoes have finished cooking.
