Serves 4 to 6
2 pounds raw shrimp, peeled and deviened
3 teaspoons Spice Delight All-Purpose Essence, divided
2 tablespoons olive oil
1 cup button mushrooms, sliced thin
½ cup red onion, diced medium
½ cup green bell pepper, sliced thin
½ cup roma tomatoes, diced medium
2 teaspoons blackening seasoning
2 teaspoons whole dried basil
¾ cup chicken stock
2 tablespoons unsalted soft butter
16 ounces penne pasta, cooked
Dust shrimp with 1 teaspoon Spice Delight. Mix together and refrigerate for 30 minutes.
Heat olive oil in large stockpot over medium heat.
Saute all vegetables listed above in the olive oil, except the tomatoes.
Add the blackening seasoning, basil and remaining 2 teaspoons Spice Delight and saute for 3 minutes.
Add shrimp and cook for another 2 minutes.
Add stock, butter and pasta and cook for 3 more minutes.
Once pasta is hot, turn off heat and fold in tomatoes.
