Spice Delight
Shrimp Gumbo Recipe
Serves 4 to 6
2 tablespoons olive oil
1/4 cup diced onion
1/4 cup diced green bell pepper
3 tablespoons Spice Delight All-Purpose Essence
1 tablespoon dried thyme
1 tablespoon dried basil
2 cups marinara sauce (your favorite)
2 cups chicken stock
1/2 cup fresh or frozen okra
1/2 cup fresh or frozen corn
2 pounds peeled and deviened raw shrimp
1 cup cooked Uncle Ben's rice

Heat olive oil in a large stock pot over medium heat,
Sauté onion, bell pepper and the spices listed above for 3 to 5 minutes, stirring occasionally.
When vegetables are tender, add marinara sauce, chicken stock, okra and corn.
Cover and cook on low heat 30 to 35 minutes, stirring occasionally to prevent sticking.
Stir in shrimp; cook 5 to 7 minutes.
Stir hot cooked rice and serve.
Chef Barry's Tips:
To save time, you can purchase cooked rice at your favorite Chinese take out.
If gumbo becomes too bitter, stir in a pinch of sugar to cut the bitterness. If gumbo becomes too dry, add more chicken stock or tomato juice.
