Spice Delight
Crowder Pea Stew with Cornbread
Ingredients
1 Tablespoon vegetable oil
½ cup red onion diced medium
½ cup carrots diced medium
½ cup tomatoes diced medium
¼ celery diced medium
2 tablespoons spice delight all purpose essence
2 cups fresh Crowder peas
1 quart chicken stock
1 cup half and half

Method

Heat oil in large stock pot over medium high heat.
Add the next five ingredients listed above, and sauté for five minutes.
Add peas, and stock cook for 45 minutes or until peas become tender.


Cinnamon Cornbread Recipe
1 small box jiffy cornbread mix
½ cup milk
3 large eggs
2 tablespoons ground cinnamon
2 tablespoons brown sugar
1 teaspoon vanilla extract
½ teaspoon baking powder

Method
Preheat oven to 400 degrees.
Spray 8x8 baking pan with vegetable spray.
In a large bowl combine all the ingredients listed above, and mix well.
Pour batter in prepared pan.
Bake 18 to 20 minutes until golden brown
